Meal Plan 21 Day Fix — Recipes

 Roasted Cauliflower Mash — 1 Green 1 Tsp  — Directly from the Insanity Max 30 Meal Plan
4 Cups Cauliflower Florets, washed patted Dry
4 tsp olive oil
1 tsp salt
1/4 tsp granulated garlic (optional)
2 Tbsp low – Sodium Veggie Broth
  1. preheat oven 400 degrees
  2. Place Cauliflower on large baking pan
  3. drizzle with oil, toss gently to coat.  Season with Himalayan salt and garlic if desired
  4. Bake, stiring halfway through for 40 to 5 minutes or until tender
  5. Place in food processor; add veggie broth.  Pulse until smooth

Cinnamon Mashed Sweet Potatoes – 1 Yellow  Directly from the Insanity Max 30 Meal Plan
2 Raw Sweet Potatoes
Ground Cinnamon
Ground Black Pepper
  1. preheat oven to 400 degrees
  2. cover a baking pan with aluminum foil
  3. scrub sweet potatoes and pierce several times with a fork.  Bake for 35 to 45 minu
  4. remove sweet potatoes from oven cool for 15 min
  5. scoop out Flesh of Sweet potatoes and mash
  6. sprinkle with cinnamon and pepper

Chocolate Shakeology Recipe
1 Scoop Chocolate Shakeology
1/2 Banana
4 oz Unsweetened Almond Milk
4 oz Water
cinnamon
Handfull of ice
Blend

Gluten Free Quick Oats
Cook Oats as directed – measure oats in yellow container before cooking

Mediterranean White Fish
 1 Red – 1 Tsp Directly from the Insanity Max 30 Meal Plan
4 (4 oz) Raw White Fish Fillets
4 tsp olive oil
Mediterranean Spice Mix or chopped fresh oregano
Fresh Lemon to taste
  1. Preheat Broiler to high
  2. drizzle with olive oil.  Season with Mediterranean Spice Mix or lemon juice
  3. Broil fish 3 – 5 min or until fish is opaque and flakes easily when tested with a fork
  4. squeeze fresh lemon before serving
Spice Mix
4 TBS dried parsley, crushed
4 tsp dried onion flakes
2 tsp dried basil, crushed
1 tsp ground oregano
1 tsp ground thyme
1 tsp garlic powder
1 tsp sea salt
1/4 tsp ground black pepper

Turkey Chili with Beans
1/2 Green 1 Red 1/2 Yellow – Directly from the 21 Day Fix Extreme Meal Plan
1 tsp olive oil
1 1/2 lbs turkey
1 medium onion
1 medium bell pepper, chopped
3 cloves garlic
1 1/2 tsp ground cumin
1 TBS chili powder
1/2 tsp Himalayan Salt
1/4 tsp cayenne peper (to taste, optional)
1 Cans Black Beans, drained, rinsed
1 Can all- natural diced tomatoes, no sugar added
12 fresh cilantro sprigs, finely chopped (optional)
  1. Heat oil in large saucepan over medium high heat
  2. Add Turkey, onion, bell pepper and garlic, cook stirring occasionally for 5 to 8 minutes
  3.  Add Cumin, Chili powder, salt, cayanne pepper, stirring occasionally 1 min
  4. Add Beans and Tomatoes (with Liquid).  Bring to a boil, reduce heat to low, gentle boil stirring occasionally for 15 – 20 min or until thickened
  5. Serve warm

Turkey Lettuce Wraps
1 Red 1 Green —— makes 6 servings — 1 wrap each  — Taken from the 21 Day Fix Extreme Meal Plan
1 1/2 lbs Turkey
1 tsp garlic powder
1 tsp ground cumin
1/2 tsp Himalayan salt
1 tsp chili powder
1 tsp paprika
1/2 tsp dried oregano
1/2 medium onion, finely chopped
1/2 green bell pepper finely chopped
3/4 cup water
3/4 cup tomato sauce, no sugar added (4 oz)
6 Large Romaine Lettuce Leaves, washed, dried
1 medium tomato, chopped
1 cup cilantro (optional)
  1. Heat oil in large saucepan over medium high heat
  2. Add Turkey, cook stirring occasionally for 5 to 8 minutes
  3. Add garlic powder, cumin, calt, chili powder, paprika, oregano, mix well
  4. Add onion and bell pepper, cook, stiring frequently for 4 to 5 minutes or until onion is translucent
  5. Add water adn tomato sauce, bring to a boil.  Reduce heat to low, cook, covered for 10 to 12 min.
  6. Top each lettuce leaf evenly with turkey mixture, tomato, cilantro

Mini Vegetable Egg Cups

Non Stick Cooking Spray
12 Large Eggs
Himalayan Salt and pepper
1 10 oz Bag Baby Spinach, finely chopped
1 medium Red Bell Pepper, finely chopped
2 green onions
  1. Heat Oven to 375 degrees
  2. Lightly coat a 12 cup muffin tin with spray
  3. place eggs in a large bowl; whisk to blend.  Season with salt and pepper if desired
  4. Add spinach, bell pepper and onions, mix well
  5. Evenly pour egg mixture into muffin cups
  6. Bake for 15 to 20 minutes or untila  toothpick inserted into the center of the cups come out clean
